Five - Element Soup

The Five Elements, their season, color, taste, yin organ, and example foods.
Wood Element: rising energy of spring season, green color, sour taste, organ is liver, Greens & Parsley.
Fire Element: dispersing energy of the summer season, red color, bitter taste, organ is heart, Red Bell Pepper.
Earth Element: balance or circling energy of fall season, deep yellow or orange color, sweet taste, organ is spleen, Carrot & Pumpkin.
Metal Element: contracting energy of late fall season, white color, pungent taste, organ is lungs, White Radish.
Water Element: dormant energy of winter season, black color, salty taste, organ is kidneys, Black Mushroom, Lotus Seed (grown in the dark), and Sea Weed (salty for the season).
Ingredient List:
Mung Beans - 1 1/2 Cups - soaked over night
Konbu - 5 cm Sheet (for flavor and digestion) - soaked over night
Lotus Seeds - 1/2 cupped hand full (8 - 9) - soaked over night unless fresh
1 Quart purified water
Large White Asian Radish - 1 - cut up into chunks
Large Red or Orange Asian Carrot - 1 cut up into chunks
Pumpkin - 4 cups cut up into chunks
Black Tee Mushroom - 1 Cup - Chopped
Sea Weed - 1 Cup
Red Bell Pepper - 1 Large
Greens - 1/4 of a Large Bunch (looked like spinach, but I'm sure it is other stuff)
Fresh Basil - 1/4 of a bunch
Vegetarian Oyster Sauce - 3 T
Parsley - 3 Springs for Garnish
Cream - to garnish1. Wash and soaked the mung beans, konbu, black mushrooms, lotus seeds over night.Konbu.
2. Bring some water to a boil to cook the Mung Beans and Konbu along with its soaking water. Discard foam (gas causing enzymes, hard to digest polysaccrides). Allow to boil on low for an additional 15 minutes without being covered so more of the gas causing enzymes can boil off, then simmer with lid for another about 30 minutes. When they are tender drain the water off and set it aside.
3. In a fresh pot add 1 quart of water. Cut up, and add large chunks of the carrots, radish, cut up the black mushrooms, add the lotus seeds. When carrot is 1/2 done add peppers and pumpkin. When done, add sea weed, green leaves (spinach), cooked mung beans. Last add basil, and oyster sauce. Stir until throughly cooked. Blend.
4. Garnish with cream and parsley.
5. Serve with a smile! Healthy, nutritious Five Element Soup.
